Runner bean chutney, recipes please -- yum !

  Have oodles of beans too,   i'ts like the hanging gardens of Babilon out there !   ;D

eeek,bought some off a WI stall once and found it quite revolting.

My OH quite liked it but then again he will eat anything LOL ;D

  tried and tested recipes that they had used and enjoyed.  !

   sight members   ---   rather than do a ' cold ' research programe on Bean Chutney !!    ???

In the second link that Flighty provides, I think sandersj89 posted a picture of the type of runner bean cutter-upper that he used - thing is he never wrote the answer to a previous query on this (just posted the picture) - so my question is:  did he use a gadget that cut the beans long and thin or one that cut them across the bean at an angle making them chunky shape?  ::) ::)  I am into making chutneys at the moment and will definitely add this to my repertoire.

I was going to make this one, found on http://www.hookerycookery.com/index.htm it sound quick and easy ;D

 
Runner Bean Pickle
Makes about 4lb.(2kg)

2.5 lbs.(about 1kg) runner beans

1.5 pints (900ml) distilled vinegar

1.5 lbs. (675g) onions

10 oz. (275g) demerera sugar

1 level tbsp. turmeric

2 level tbsps. dry mustard powder

2 level tbsps. cornflour

Cooking Instructions:

String the beans and slice diagonally into three quarter inch (2cm.) pieces

Peel and slice the onions

Pour one pint (600ml.) of the vinegar into a pan, add the runner beans and onions, then cover and simmer for about 15 minutes or until tender

Blend the cornflour, turmeric and mustard into a paste with a little of the remaining vinegar

Add to the pan with the sugar and remaining vinegar

Bring to the boil then reduce heat and simmer gently for 10 minutes, stirring occasionally

Spoon into warmed jars and allow to cool before covering with vinegar proof lids

Twinkletoes I think he was referning to a bean slicer. I still have my mums! But here's a piccy of 1 off Amazon - where else?!

These do cut the beans very finely so I guess the beans might need less cooking than if they were chunkier (if you see what I mean).

i use a runner bean slicer similar to the on 1066 has posted and i think its the dogs danglies, the beans cook much quicker using less water and they arnt stringy, just remember if you buy from amazon go through the  A4A shop from the link at the top, then Dan gets a percentage of the sale with no extra cost to you ;D
