Veggies in a polytunnel

Because I have a lot of polytunnel space in two tunnels, I want to grow as much of my veg as possible in the tunnels.  Is there anything I shouldn't grow in there, or can I put pretty much everything there?  I assume there will be sufficient pollination for beans if the double doors at each end are open when possible.
