Plum Chutney

Just eating last years ;D (sadly no one has given us any to play with this year! :'()

Plum Chutney

2 lb plums
1 teaspoon salt
½ pint vinegar
1 tablespoon pickling spices
12 oz sugar
1 teaspoon ground ginger
2-4 oz dried fruit (if desired)

Simmer stoned plums, dried fruit, pickling spices, (tied securely in a muslin bag), salt and ginger in a saucepan with just enough vinegar to to stop the mixture from burning.
Cook gently until the fruit is soft, stirring from time to time.
And remainder of vinegar and thoroughly stir in sugar.
Boil steadily until the mixture is thick.
Remove spices.
Pour chutney into hot jars and seal.

Wait a few months for it to mature before eating!
