Bread?
« on: October 02, 2008, 10:17:23 »
Not sure if anyone can help with this but...

I bought a Fastbake bread maker the other week and followed the instructions to make a white loaf to the letter but when it was done the bread was kind of brown and looked and tasted more like crumpet than bread.

Does anyone know how to make a real white loaf with one of these things?

Sounds like too much water.
A typical bread made from white bread flour will have a hydration around 65% (meaning 65 grams of water for every 100 grams of flour in the bread).

This site lists some other possible causes of holes in your bread.

Why not try the bread mixes and see what happens.  Then you will know if there is something wrong with your new machine or the recipe you were using.

I'm going to take it back today along with the loaf, that is by far the best one out of around 39 attempts.

I sympathise, I've also been through this getting-it-right phase with several bread machines now.

Your excellent pics show a classic result of a too wet dough.

The paddle could mix some of the flour/water mix but because it was so sloppy, and it couldn't pick up the rest of the flour into the dough (hence the dry flour bits on the cooked loaf)

If you think this will happen again, then lift the lid as it mixes. If you don't get a dough ball in 5-10mins then sprinkle in another 1 -2 tsp flour as the paddle goes around. You should see a pretty instant result as the dough should start to form into one large ball.

Even though you followed the recipe to the letter, it doesn't allow for some flours being a little damper than others (all flour contains some moisture).

I hope your next loaf is better!

As asbean said the best bread maker is your hands.
