sweet pickle

Anyone have a tried and tested recipe for sweet pickle?  Tis the only pickle we like (well, apart from mums pickled onions and cabbage and they have to be shown the vinegar briefly, not left to soak for months and months)

Our standard is Delia's sweet cu . Everyone likes it. = Tim

Oh yes - beet - as Wicker's below - cup vinegar + 1/2 cup brown sugar. Sweetly nice. 'Specially with golden beet.

I do beetroot in sweetened vinegar - does make a difference.  Chutneys can be as sweet as you want them to be I expect - mine are.  I use unrefined cane sugar which gives a sort of subtle caramelly taste.  Someone posted the URL for a good pickling site a while back.
