Grey squirrel stew3 large greys, skinned, quartered, head, feet and tail removed. Remove stomach and discard, retain kidneys, heart and liver for later.2 cloves wild garlic or 200g wild garlic leaves200g nettles and/or young beech leaves ½ pint of hedgerow wine, red if possibleAdd all ingredients and cook on slow for 5 hours and then turn to high, add heart liver and kidneys and cook for a further 1 hour.
