recipes for saint patricks day

Im doing a special lunch to celebrate St Patricks day at the daycare centre where I work main course easy beef in guiness now Im stuck on the veg and pudding any ideas?

One St Patricks day menu I have done in the past is below.

Frothy Lime Punch
Dill Dip and  Green dipping veggies for a nibbler

Dublin Bay Prawns as an appetiser or mini Pancakes Collen, or you could do a soup , I have several Irish soup recipes but it might be a bit much with a stew.

Irish Stew (with very few potatoes in) served with Boxty pudding.
Colcannon or Champ  as a potato dish.

I would do buttered carrots if not doing stew and cabbage

I make an Irish Soda Bread, you could use Barmbrack

Irish Coffee served with Key Lime pie, which is not Irish but very green


As an alternative dessert you could do one with an Irish name or one with Irish Whisky in, the only two I can think of are Irish Mist cream, looks like a fancy blancmange, or an Irish Apple cake served with  icecream and perhaps a whisky flavoured syrup.

You might make a Tipsy cake, fancy name for a trifle made with Irish Whisky

That is the best I can do and perhaps not suitable for your purpose but might give you some ideas.

veg - something with leeks?

(Apparently leek soup (cawl in Welsh) is a traditional dish of the day)

I read St Patrick's Day as St David's Day.
