I have a question regarding the scales of potatoes.
Does the
DM
(dry matter) scale of potatoes were 1=very low, 9=very high relate to the texture scale were 1=waxy potatoes, 9=floury potatoes? ???

Yes, they do, I think. Potatoes high in dry matter will be quite floury or mealy and will be best for baking etc, as they will probably fall apart when boiled.
