Raspberry Vinegar

I use this as an ingredient in my herb salad dressing, it gives a lovely fruity flavour to the dressing. It can also be used, melted with butter on grilled or fried fish.

900g fresh raspberries
600ml red or white wine vinegar

If you're using fresh raspberries, pick half the amount needed, use in the first step. Pick the other half a week later to use in the second step.

1. Place half the raspberries in a bowl and cover with the vinegar. Cover with a cloth and leave for 5-7 days in a warm place, stirring occasionally.

2. Strain the liquid, pour it over the rest of the raspberries and cover and leave as before.

3. Strain into sterilised bottles and seal. You can add some whole raspberries to the bottles for visual effect. Wait 1 month before using.
