Fennel

We planted our fennel late this year, or rather we planted our fennel early and it didn't germinate so we planted it again.
The bulbs are only now becoming a decent size and I am guessing that they will need harvesting before the worst of the frosts??
Normally we would eat them raw in salads but salad season for us is only summer, so has anyone got any autumny/wintery ideas for fennel?
Oh and can you store them?

Hi Viks - there's another fennel thread in the gallery.  Some recipes there.   I don't think it stores well - goes stringy and limp in my experience.   I have a late planting too so will put cloches over them if the frosts start before they're ready to eat.
