Sardines with a light Tomato Wine Sauce

Yer Yer,we have all journeyed around the Med scoffing lunchtime plates of
grilled sardines washed down with local village wines,so why not carry on when we get back home,so here we have some fresh Cornish fillets begging for the treatment...........



2 to 3 whole fillets per person
2 cloves of garlic sliced
1 bunch of fresh parsley chopped fine
fresh large tomatoes
Extra virgin olive oil
splash of dry white wine
1 tsp Dried oregano
salt and freshly ground black pepper
1 tablespoon of lemon juice (optional)
salad to serve
garlic bread to serve



heat the oven to 200 degrees and after spray oiling and seasoning the halved tomatoes bake them for 20 mins.....then skin and chop
of course a tin of chopped tomatoes is equally as good....



heat a splash of olive oil in a frying pan on a medium heat and fry the sardine fillets 1 minute each side .......



turn the heat down and add the chopped tomatoes,chopped parsley,garlic,
splash of wine,dried oregano and a squeeze of fresh lemon juice,season well...
cover the pan and let it cook for a further 3 minutes......



serve with some garlic bread for the few squeamish out there that will come across a few fine hair bones and a fresh side salad and of course
a chilled glass of pinot to wash it down.........



just add a squeeze of fresh lemon and tuck on it........

Lovely.  We are in Cornwall at the moment but haven't caught anything yet......not even a mackerel.  We weren't the only ones with empty lines though.

Thanks Gazza.  We are having a lovely restful time here though the weather is not that good.
