Cod Loin with Prawns & Vegetable Linguine

Low Cal Suppers are getting served a bit more around here lately so with this in mind,I decided to make a Prawn and veg Linguine with a piece of baked Cod............



for 2 people.................

150g Dried Linguine Pasta
200g mixed fresh veggies...peas,sugar snap peas, broccoli tips,
whole beans,Fennel Bulb,fresh parsley,cherry tomatoes....
180g pack Raw Jumbo Prawns...shelled but with tails left on...
100g Light Garlic and Herb Cream Cheese
2 Cod Loins
salt and pepper
low cal spray olive oil

pre heat fan oven to 180 degrees,spray cod loins with low cal olive oil spray and season, place on cooking tray in middle of oven...cut the cherry tommies and place on same tray..........set timer for 12 mins.

Chop the vegetables to bite sized pieces and set aside..........



boil saucepan of salted water,then add pasta,bring back to slow boil,after 5 mins add the chopped vegetables........you can add the fresh chopped vgetables at any stage so as to blanch them just crunchy if you prefer or cook them  for the whole 10 mins pasta cooking time.....your choice.



when the fish and pasta have 5 mins left to cook heat a frying pan
to a medium heat and spray with low cal olive oil......

add the Raw Prawns and fry 1 minute either side till nicely pink and cooked through..........

take frying pan off heat.....then add 4 tbsps. of pasta water to frying pan then add cream cheese and chopped parsley and seasoning ... stir the pans contents to mix thoroughly..........taste sauce to check its seasoned ok.

Drain pasta and vegetables ..........

Turn oven off but keep fish and tomatoes warm in ovens residual heat...

plate up to serve..............




serve a portion of Linguine and vegetables and top with the prawns and sauce,place the oven roasted cod loin on top and place the tomatoes around
the plate...........
