New chilli sauce recipe

I just made this recipe up as I went along to use up all my frozen chillies to make a sauce.
The amounts are what I had in the cupboard/freezer.

4lbs frozen chillies (or fresh)
2lbs onions
1kg caster cugar
1lb demerera sugar
1/2 pint pickling vinegar
1 litre water
1 teaspoon salt
Oil for frying the onions

Put the chillies and water in a large saucepan (I used my pressure cooker, as that is the biggest I have), bring to the boil and simmer for 1/2 hour.
Chop 2lbs of onions and fry in a little oil until soft and slightly browned.
Add the onions and all the remaining ingredients to the chillies and cook for a further 1/2 hour.
Use a hand blender until the sauce is the right consistency.
Decant the sauce into sterilised jars with the poppy 'lids', or bottles if you have some.

It made enough for just about 11 jars (of random sizes!).

Sounds great  ;D but It won't have a long shelf life with the water content in the sauce

I'll have to scoff the lot soon then, lol.

Mortality

Can probabily freeze it.

A nice way of doing it is to use ice cube trays and put the chilli cubes in a tub, easy to pick out what you need to cook with then. (I used to do that all the time with home made baby food.)
Please don't be offended by my nickname 'Mortality'
As to its history it was the name of a character I played in an online game called 'Everquest'
The character 'Mortality Rate' was a female Dark Elf Necromancer, the name seemed apt at the time and has been used alot by me over the years.
