Mortality

Butternut Squash, Broccoli and Bacon Gratin.

Vegetable Oil or Butter (to cook onion etc in)
1 Onion Diced
2 Cloves Garlic Crushed
2 Slices of Bacon Chopped
Half a Broccoli Flourette Head Chopped
200g Butternut Squash Cubed
250 ml Chicken Stock (or Veg Stock if you prefer)
Herbs optional.

Topping
100g Cheddar Cheese Grated
2 Thick Bread Crusts (Bread Crumbed via grater)

Pre heat oven 180 C

Fry onions and garlic until brown, add Squash and Bacon cook until brown, put in the baking dish cover with the stock. Add the broccoli mix in. Cook for 40-45 minutes.

Make the topping, mix the grated cheese and bread crumbs together and sprinkle evenly on the top. Back to the oven for 15 minutes until the topping is lightly browned and crunchy.

Serves 2

I was going to do this with Chicken but it wasnt defrosted  ;D and for the cheese I didnt use Cheddar this time, I used up the left over Christmas cheese board cheeses, mainly Cheshire and Red Leicester, very colourful.
