I want to put some rhubarb on my plot and was just looking at the Organic Gardening Catalogue which offers me a choice between Champagne and Victoria. Which one should I go for?

I think this has got to be choice by taste. Can you not purchase a single root of each and see which you like best for raw taste and for cooking.

Depends on how you prefer your rhubarb.  If you like plenty of long pale pink sticks raised under an inverted dustbin in early spring, then Champagne is much better quality and flavour, but Victoria will provide a follow on when you`ve eaten all the champagne.  Get both.
