this recipe is scrummy..I've adapted it so's ray can have some..
10 oz plain flour
1 teaspoon baking powder
1 teaspoon bicarb
half teaspoon salt
2 small bananas
3 oz sugar or sugar substitute
3 eggs, lightly beaten
6 fl oz sunflower oil
2 large carrots, peeled and grated
2 canned pineapple rings, in juice, drained and chopped
2 oz raisins or walnuts
in a lage bowl, seive the flour, baking powder, bicarb and salt, stir
mash the nanas, add to the flour with sugar, eggs and sunflower oil..beat well
add the carrots, pineapple and raisins, fold together
the mix will be runny, don't panic
cook for 1 to 1 1/4 hours, gas 3 or 160c/325f
if you like, there's an icing recipe
20g tub soft cream cheese like philadelphia
8 oz icing sugar
3-4 teaspoons lemon juice
zest of the lemon
beat the cheese, seive in the icing sugar, add zest and 2 teaspoons lemon juice, beat 'til smooth, if you want it runny, add he rest of the lemon juice
this is a lovely, moist cake, everyone at the plot loves it ;D
