Queensland pumpkin scones
« on: April 17, 2007, 13:13:47 »
As requested by the girls on the squash/pumpkin thread ;)
Pumpkin Scones
Ingredients
- 20g butter
- 75g sugar
- pinch of salt
- 1 egg
- 1 cup of steamed mashed pumpkin (250ml cup)
- 200g self raising flour, sifted
How to
Preheat the oven to hot (225-250 c)
•  Beat the butter sugar and salt to a cream.
•  Add the egg and mix with a knife.
Add the pumpkin.
•  Add flour and mix avec a knife again. Don't overmix, mixture should just hold together.
•  On a floured surface, roll out the dough to a 3cm thickness (about an inch and a bit). Cut into rounds.
•  Put the scones on greaseprof paper on a baking tray. Cook at top of oven for 15 minutes. Keep an eye on them, they cook quickly!
Delicious with butter and jam or jam and cream.
2012 - Snow in February, non-stop rain till July. Blight and rot are rife. Thieving voles cause strife. But first runner beans and lots of greens. Follow an English allotment in urban France: http://roos-and-camembert.blogspot.com
