Tomato sauce

I just roasted a kilo+ of toms in the oven and I've blitzed them into a sauce with fried garlic and onion. All in a 500ml sanitized kilner jar.

How long do you think these will last in the fridge?

I'd only keep it for a week in the fridge, but if you do it down into portions, in take out meal trays or marge tubs then freeze it you can use a bit at a time...

Yummy, sounds gorgeous Cestrian. Like Saddad I'd freeze any excess, in handy size amounts.

Ok I'll freeze it then - Why is it pickled stuff lasts for ages then? Is it the low pH of the vinegar?
