Using this as a green manure.. it has grown away really well, now waist high.. can we eat it? I know it is edible.. I've tried a bit, we deliberately grow red mustard as a winter salad.. is our white mustard a real crop anywhere?

Well you can but there are better!
See:
http://www.webmd.com/vitamins-supplements/ingredientmono-115-white%20mustard.aspx?activeingredientid=115&activeingredientname=white%20mustard
Take a crop and mow the rest, working lightly into the soil.maybe cover with black polythene.
