Fried Mackeral Strips with Potato Crisps

Just pop along to your local beach and catch a few for supper......whats that you live inland......ok.Tescos it is then..!!!!!!!

Seemed the thing to do with Fresh mackies that I caught from Chesil beach in Dorset sitting in the fridge ....
....so what to do.

Simply Fried.....sorted.

INGREDIENTS

2 MACKERAL ( 1 PER PERSON) filleted and cut into strips
salt and pepper

POTATO CRISPS

1LB New Potatoes peeled and cut into 2mm slices
Fresh Rosemary and Thyme stalks or use 1/2 tsp dried
Olive Oil for cooking
splodge of Butter
salt and pepper

ONION & TOMATO WITH GARLIC

3 Fresh Ripe tommies cut small
1 Red Onion cut small
2 cloves of Garlic sliced
salt and pepper

MICROWAVED APPLE SAUCE

2 Cooking apples cored and peeled and cut small
sprinkle of Cinnamon
Sprinkle of Fresh Nutmeg
sprinkle of sugar



Some days pin boning just aint on the menu so todays mackies
were filleted and strips cut either side of the bone....job done  !!!!




OK....OK...I know its not to everybodys taste but im a convert now to have
apple sauce with mackerel as it stops indigestion in its trax !!!!

Dead easy.........put the chopped apples in a microwavable bowl and sprinkle with the cinnamon and nutmeg and sugar add 50ml of water
bind together....cover with cling film and make a few holes....set micro on
high for 5 mins.....let this cool and remove cling film....give a stir and set aside.....super quick apple sauce....add more sugar or spice should you wish.



Ok,lets make the Potato crisps,...there chips I hear you cry...no there not there crisps....right.....heat some olive oil in the pan/wok and add a thingy of butter and the herbs ......fry potato slices on a high heat to brown then turn heat down and fry both sides till slices are "crisp and crunchy",remove when cooked through and keep warm.



while flavoured oil is still hot add the chopped toms,Garlic and onions
fry through till cooked and pulpy,once cooked set aside and keep warm.



Fry seasoned Mackerel strips in hot oil skin side down till flesh turns opaque at last minute turn heat off and turn strips over to finish cooking.



A rough and ready fried mixture when your in the mood for Mackeral...
Plate up and enjoy a light lunch or supper of fried mackerel with crispy
potato slices,onion and tomato and a blob of Apple sauce.

They stunningly fresh mackerel, how has fishing been at chesil beach?

The last winter storms have ruined fishing,it's taken 6 months for the mackerel to show,I sat there the other nite and at dusk the sea exploded in front of me ,there was a 50 yd circle of them making the sea surface boil....I took 3o home for the table and bait,there must have been a shoal of 1000's
Left over,for next time.

That said,I've been catching Bream and some early codling have been making a show
So hopefully well have a coddy filled winter on the shingle.

I've not tried apple sauce with mackerel before but will give it a go. Another interesting dish to try, thanks.
