Almond Crusted Squid with Sumac Mayonnaise

I got bored looking at this box of squid in the freezer,and as I aint gonna be fishing any time soon decided to munch it.........so.





so defrosted a few for a tasty starter !!!!!!!!!!!!!...of course squid can be purchased from your local wet fish shop or supermarket.

hhhhhmmmmm....whats tasty,,!!!!!!!!!!

INGREDIENTS

Calamari Squid Tubes
100ml Natural Yoghurt
Oil for Frying
150g Mayonnaise
1 Tsp Ground Sumac
1 Tbsp Lemon Juice
150g Plain Flour....seasoned
3 Eggs Beaten
125g Ground Almonds
125g White Breadcrumbs
Hot chillies chopped (optional)
Chopped Parsley
Fresh Lemons halved



Remove the tentacles (removing the beak) and set aside,now skin the squid tubes,split down the middle,clean insides.
Now cut lengthways into strips.



pat squid strips dry and then dunk them into the yoghurt,this softens
the flesh,now set aside in the fridge for 2 hours.



Right,lets make the Sumac Mayonnaise........



This is Sumac,its a tangy Lemoney flavoured ground berry that is kind of sour tasting  ...NO heat....just flavour ...and 1 Tsp (or more to taste)mixed with 150g Mayonnaise and 1 tbsp of fresh lemon compliments the squid as a dip.!!!!!!
You can buy it in Tescos....etc...anyway once you've mixed it set it aside in the fridge.



Remove the squid strips from the fridge and now dip them in the seasoned flour.....then the egg wash...and finally the Ground Almonds and Breadcrumbs....once done put in the freezer for 30 mins...as it helps to
keep the mixture on the squid strips and fries much better.



I prefer to Wok cook them @ 190 degrees.

3 to 4 mins cooking time till their Golden brown and crunchy is enough....once cooked soak any residue cooking oil from the fried squid strips on kitchen paper.



Now take the Hot Squid Strips and dunk those tasty crunchy morsels
in the Sumac Mayo.......Delish !!!!!!!!!!!!!



Now Plate up the Fried Squid Strips with your dip and dot with a few small pieces of chopped Chilli (optional) and a sprinkle of Parsley...and a good squeeze of fresh Lemon.
