root veg?

There doesn't seem to be a category for root veg except bunch of carrots!  Anyway, here is the parsnip my husband dug up with  some difficulty yesterday.  All 46cm of it!

What will you do with it?  Parsnip soup, roast parsnips?

We dug up five like that, but most of them lost their tails, they were so long! Sadly not for roasting or soup, both of which we really enjoy, as I am preparing an 80th birthday five-course meal here, for 9 on Sunday (mix of French and English friends) and I'm using them for mixed potato and parsnip mash.  Glad the parsnips were dug up yesterday as since early this morning we have had continuous storms and unbelievably heavy rain, forecast to continue until end of Sunday!
