Almond Mincemeat Tarts

Not really a sweet maker so just had a bit of fun making these for jude to take to work.

Ingredients
10oz  Plain flour
3oz Icing sugar
1 tsp ground cinnamon
1 Egg yolk
3 tbsp milk
1lb jar mincemeat
1 tbsp of Brandy

Lemon sponge topping
4oz butter
4oz caster sugar
6oz self raising flour
2 large eggs
2 grated lemon rinds

Lemon Icing
4 oz icing sugar
1 tbsp lemon juice

Make the pastry by sifting flour,icing and cinnamon into a bowl and rub in butter till it looks like breadcrumbs
add ground almonds egg yolk and milk and knead to form a soft dough,chill for 30 mins.


heat oven to 170 degrees,meantime roll out pastry and cut into 3 inch rounds and place in buttered tins.


Put mincemeat into a bowl and add brandy(be generous  ""HIC" ) and stir together.


Add mincemeat to pastry cases.


Now,whisk butter sugar flour eggs and lemon rind together.


spoon lemon sponge filling onto mincemeat


Bake for 15  to 20 mins till golden brown and sponge is springy to touch  !!!!!!!!

Add icing sugar and lemon juice together and decorate cakes anyhow you like.




Funtime christmas sweet snax cold or with warm custard.

Judy sez there mini bakewell tarts and scoffs em down,so happy days.

Gazza, I'm going to have a crack at these.  You left the almonds off your ingredients list for the pastry.  How much do you use?

Your bread pudding recipe has become the stuff of legend in the Melbourne household, and I'm hoping for a repeat performance with the mincemeat bakewells!

Im lethal at doing that....silly soNso.

50grms=2oz of Ground Almonds is mixed in the pastry mix.

Tween you and me,Judy is a marzipan luvver (im not) so after dividing the sponge mixture in 2 bowls I added 3 drops of almond extract not much more as the flavour is quite intense(not essence as its a poor substitute) to 1 of them and she and the girls at work have said they enjoy them ,so alls good.
I eat the normal recipe ones.... ;)

Judy brought me a load of silicon rubber muffin cake moulds for christmas so Ill be using those in future as our old
metal trays are past it.... :D

Glad you enjoy the bread pudding,its me mums fav... :D
