I have always enjoyed River Cottage but I think Hugh is starting to turn in to one of the TV luvvy brigade, :)

I agree on that aspect Gordonsveg, although  I like his shows , the bit where a tribe of friends suddenly come down the lane always seems a tad manufactured ::)

I'd always assumed the friends were mainly staff from his shop and restaurant(s)/
I enjoyed the programme, there were some really nice recipes, although some rather obscure ingredients!

In the canteen they serve some of their dishes on lumps of wood, would you say this is hygienic, :)

At the turnpike in northamptonshire they serve the steaks on wooden boards and chips in metal buckets!

I don't know how easy it is to clean wooden platters, but they're entirely traditional. A square meal was originally one which filled a square wooden platter to the corners.

Wood is fine for cutting boards and for serving as it is naturally antibiotic..though I do believe that not all wood has this property - beech for example..

"Our research was first intended to develop means of disinfecting wooden cutting surfaces, so that they would be almost as safe as plastics. Our safety concern was that bacteria such as Escherichia coli O157:H7 (commonly known as E-coli) and Salmonella, which might contaminate a work surface when raw meat was being prepared, ought not remain on the surface to contaminate other foods that might be eaten without further cooking. We soon found that disease bacteria such as these were not recoverable from wooden surfaces in a short time after they were applied, unless very large numbers were used. New plastic surfaces allowed the bacteria to persist, but were easily cleaned and disinfected. However, wooden boards that had been used and had many knife cuts acted almost the same as new wood, whereas plastic surfaces that were knife-scarred were impossible to clean and disinfect manually, especially when food residues such as chicken fat were present."

I love this new series, loved last week's with the Buddhist lady, her salad leaves were as holly as mine! Ha!

I thought the food looked nice except that watery sauce  :-\ the food was swimming in- uugh I thought it would make the food soggy ???
