pumpkin seeds

One of my giant pumpkins started to rot, so I dug out all(most) of the seeds.
When I got home they were rinsed in water then I started to slit them open and squeeze the end. Most had a small seed inside covered in a membrane, they ranged in sizes.

Do I rinse again then roast them?
What are your favourite coatings?

I know it's been mentioned on here before but there are toooooo many posts to go through :)
