Bean Thoran dishes

My Dwarf French beans are really producing lots at the moment, so I've been (no pun intended!) eating loads, and was reminded about this style of cooking / recipe. If you like Indian food / flavours it can be used with any type of fresh veg - carrots, courgettes, cabbage etc. It's a dry dish and goes well with all sorts of foods

Beans - a good handful
Onion(small) - 1 (Optional)
Coconut(grated) - can use desiccated instead - 1 tbl spoon
Green chillies - 2 chopped
Garlic cloves - 2 finely chopped (also optional)
Oil - 1 tbsp
Mustard seeds - 1 tsp
Turmeric powder - A pinch
Curry leaves - A few

Top and tail the beans, if they are very big halve them
Mix together the coconut, turmeric, onion and green chillies
Heat the oil in a frying pan until nice and hot
Add the mustard seeds and when they pop add the beans and garlic
Add the coconut masala mix and keep cooking.
Add the curry leaves and salt.
Cover the pan and cook on a low heat for about 5 minutes or until the beans are cooked

Sounds very similar to the curried cauliflower we tried to use up. I supposed curried vegetables of most sorts are samish.

As a meat eater I would serve as an accompaniment. If I were a veggie It would be a main.

I like it with a dal and rice, but you could have it with some baked or grilled fish and some lemon rice  :)
