Bolting celeriac

Some of my celeriac plants appear to be bolting - small flower buds on very long thick stems. I've grown the same variety for several years but never had this happen before. I've been watering them frequently due to the drought in this area. Anyone else having this problem? Should I remove the central thick stems?

You can cut the stem out but I think you have lost the plant... as it's a marsh plant you are probably right to blame the drought...  :'(
