As with Cauliflower Cheese etc toppings, I process the Cheese with the breadcrumbs.
But leave it all a bit lumpy so that it crisps well.

I agree with 1066 they do look delicious.
I remember years and years ago when i was at school and the chippy by where
we live sold fish toast, (triangle shape) absolutely gorgeous. sadly never come across them since. :(
