With 12lb of runners blanched and frozen, no room in the freezer, several pounds given away to friends, another 3lb still in the fridge and a tonne of the things still waiting to be picked, I had to come up with something and so turned to that old faithful, soup! :)
I've never seen or tasted a runnerbean soup before (although there are bound to be recipes out there somewhere) and so started from scratch:
1 Large Red onion finely chopped;
2 Medium carrots finely diced;
2 Medium potatoes finely diced;
Sweat these for 10 to 20 minutes, in a saucepan until soft.
Add 2lb sliced runners, 1 pint chicken or veg stock and some salt and pepper.
Boil then simmer until runners are cooked. Blend then add more salt and pepper it necessary. Return to heat and when ready, serve with crusty bread.
Doesn't look pretty but tastes gorgeous.
