Runnerbean soup

With 12lb of runners blanched and frozen, no room in the freezer, several pounds given away to friends, another 3lb still in the fridge and a tonne of the things still waiting to be picked, I had to come up with something and so turned to that old faithful, soup! :)

I've never seen or tasted a runnerbean soup before (although there are bound to be recipes out there somewhere) and so started from scratch:

1 Large Red onion finely chopped;
2 Medium carrots finely diced;
2 Medium potatoes finely diced;

Sweat these for 10 to 20 minutes, in a saucepan until soft.

Add 2lb sliced runners, 1 pint chicken or veg stock and some salt and pepper.

Boil then simmer until runners are cooked. Blend then add more salt and pepper it necessary. Return to heat and when ready, serve with crusty bread.

Doesn't look pretty but tastes gorgeous.

sounds lovely. will have to try it.
The only problem i will have after making soup out of the beans i have left, after giving loads away and filling the freezer,making relish and all, what solution is there to storing the soup???.
Dont fancy having a runner bean soup diet, fed up with them on toast, with custard etc..... ;D ;D
Don't worry about tomorrow, or yesterday, just think about today.

I knew there would be somebody else who had attempted runner bean soup.  ;D
I shall give it a go tonight, but without the carrots, as I don't have any.
Maybe add some herbs, ginger and garlic.

I fried three small onions and two cloves of garlic in some corn oil,
added 4 medium potatoes, the chopped beans, don't know how many,
about twice the volume of the potatoes, added some dried mixed herbs,
gave it a stir then added enough water to cover and then cooked in my pressure
cooker for 25 mins.
It made enough to fill 5 Sainsbury's cheap (4p) curry sauce jars.

I couldn't really taste the runner beans though, the potato flavour was more prevalent.

A good use for end of season stringy beans.
