cob nut meringues

it is that time of year and if any of you have access to cobnut trees (or any other nut trees to think of it) then this might be a lovely recipe to try - I have just made a lovely amount of cobnut meringues

approx 4 oz or more of shelled nuts
6 oz sugar
3 egg whites

roast the shelled nuts for approx 20 minutes (don't burn them)
ground the cooled nuts
whisk the egg whites to the soft peak stage, gently whisk in the sugar
fold in the ground nuts
make about  8 big meringue mounds on a greaseproof tray and bake really slowly for about 3 or 4 hours at least - perfect for the bottom Aga oven

a side portion of cream might come in handy  ;D

it is  perfect welcome to autumn  :D
