Tomato Salsa Chutney

I have just madee a batch of this, making up the recipe as I went along and am so pleased with the result I thought I would put it on here rather than writing it in my cook book!

1.5kg toms - chunked up (no need to be fussy with any of it!)
500g onions
1kg mixed peppers (got a bargain on a load of wrinkley ones, mostly yellow but some orange, a red and a green too)
1.5 pints malt vinegar
400g brown sugar
4 chillis - I like it quite hot but adjust to your tastes
salt - to taste
pepper - plenty of
chilli powder - wasn't quite hot enough to start with ;)
dried corriander - a good shake of
garlic - about a clove
lemon juice - a nice squirt

chop it up and throw it all in a big pan and boil gently until about 1/3rd of original amount then put into hot steralised jars.  Made 6 x 1lb jars.

That sounds lovely. If my large pan wasn't with daughter no 3 I would make it this w/e.
