tomatoes ?

hi people i' ve got so many tom,s at the mo i could do with some idea's about wot i can do with them. I'd love to make some sun dried tomatoes, but not sure that's poss with our lovely British wearher. Apart from tomatoes chutney has any one got any ideas  ;D

How about making some fresh tomato salsa and putting it in the freezer.

we make pasta sauce and pizza topping, will be starting end of september, already got 12 lb of toms frozen ready  ;D

Sun Dried toms: oven on lowest setting & bung'm in for 6-8 hours  store in tuperware in fridge for ages/freeze. add herbs & olive oil if not fat!

last night i made;

tomato tart, there are tons of recipes out there,

tonight i made ratatouille,

this person's blog has another idea http://allotment2kitchen.blogspot.com/2009/08/sweet-and-savoury-baklava.html.

last year i made sundried tomatoes in my oven, but be warned you have to leave the oven on for a very long time 6+ hrs/ or in my case overnight but on a very low heat, they were scrumptious but i dare not think of the energy consumption :o ::).

you can as others have said make sauces, purees, soups, etc for freezing.

i plan to start to also bottle the plum shaped sauce favorite varieties in their whole form, so for a few months i could give Tesco's tin tomatoes the finger ;)

freeze them whole, you can use them for cooking all year then!! ;)

thanks for all the ideas. Will be trying the sun dried tom's and the pasta, pizza topping sauce and i will freeze the rest didn't know that could be done thanks people  ;D

 This is how I like to prepare my tomatoes for freezing, from here I just bring them to the boil for a moment, season , drain cool and freeze.
             
       By bringing them to the boil kills any bacteria that could be there.

We combined the tomato and courgette glut with the fact that my big Kelsaes onionswon't keep all that well and made a couple of big saucepans of universal red vegetable sauce.... use as chunky for a vegetable a la rataouille or blend it for use on pizzas and pasta (or 50~:50 for pasta, blended also makes a cracking sauce base for curries (fry some veg up, couple of spoons of balti paste and a pot of this stuff blended up....  We use the Tescos food storage tubs.... they do one that comes in a pack of three for about a quid and it takes 600ml (bit over a pint) Perfect for a big soup or sauce base or a portion of curry/chilli......

I used my heated trolley for sun dried, it worked well. Made loads of soup etc., now run out of freezer space so I'm giving them away :'(

I make passata, reduce it, then freeze in an ice cube tray which I later empty into bags.
You can add the cubes in cooking instead of concentrate (add  to gravy/bolognaise etc) or for example add to your green beans if you've got a bit bored of having them neat.

As I think already mentioned, rat freezes ok if your aubergines and arrive in time.
