Topic: Beetroot

Has anyone got any good recipes for beetroot soup?  As we have loads of beetroot and not sure what to do with them.. ???

I just like mine plain boiled with saladcream and cheese.

Tried them with lots of things and was not impressed.

If you want to keep them a little longer they pickle well I use vinegar and water and add a little sugar because I am not too keen on vinegar.
