Mustard Pickle for Hyacinth

here we go, flower  ;D
2 courgettes, 1lb onions, 2 cauliflower, half pound of french beans, salt to soak overnight in..I swap hese ingredients around, even used a courgette/marrow sized in one  ;D
sauce to pickle in
2 pints white vinegar, I've used malt in the past, makes it a bit brownish
1 oz pickling spice, half pound demerera sugar, I cut this down a bit 'cos of Ray's diabetes..1 desertspoon each ground ginger, turmeric, mustard powder, plain flour.
cut veggies up small and soak overnight sprinkled with salt and a plate on top, drain..boil 1 1/2 pints of vinegarwit pickling spice for 4 mins and strain..mix remainng ingredients in with rest fof vinegar and bring back to boil, mix in veggies, simmer 'til they are like you like, cool, put into jars and cover  ;D
