Oh they look so good Tim, they remind me of my trips to America too, funny how certain foods can take you instantly to certain parts of the world  :)

For over 50 years I've used Joy of Cooking's recipe - with Baking Powder. This time I went for Egg Whites instead.

The recipe says 600 ml fresh or canned Corn (for convenience I used 425 ml tin of Green Giant) - add 2 beaten Egg Yolks, S&P (I always add Nutmeg as well) - fold in 2 stiff Egg Whites - at the last moment or they 'die'!

PS Oh, & as with JoC, I partially crushed the Corn.
