Runner Bean Chutney

About now is the right time to make my Gran's runner bean chutney, my fav chutney infact. We made some last week on the farm as dad had oceans of runners to use. The larger runners that might be a bit stringy are fine in this recipie.

Of the top of my head the way you do it is:

3 pounds of runners, top and tail them and then string and slice using one of those runner bean slicers.
1 pound of peeled onions.
2 pints of vinegar
2 pounds soft Demerara sugar
2 tablespoons of tumeric
2 teaspoons of mustard powder
1 tablespoon of cornflower
Salt

Cook the beans until just soft, drain and put to one side.
Cook the whole onions in half of the vinegar until soft.
Roughly chopped onions and place back in the vinegar.
Add rest of vinegar and cooked beans.
Add the rest of the ingredients and cook for 20 minutes. a slow boil is fine.

Bottle in sterilised bottles and it keeps for ages, 5 years is no probelm at all.

If it seems a touch runny add some more cornflour and carry on cooking for a bit.

I was brought up on this chutney and love it, it is especially good with cold chicken or game birds. We tend to make it every third year, 2 batches of the above quantities. It does improve with aging IMHO but you can use it the day after making it.

Would this be ok to use the beans that have gone a bit woody, i have come back from holiday and found i have a load that are past eating normally and the beans inside are quite large .

Yes, as long as they are not too tough. Make sure you remove as much of the strings as possible.

The longer cooking time and the pickling process help for older beans.

Never heard of this chutney before but it sounds ideal - I've definitely got some tougher beans!!....just can't get to lottie as often as I ought.....had planned to make some marrow chutney this weekend by still missing an ingredient or two but have all for this one.....can't wait to try it....

by the way, roughly how much does that quantity make please Jerry?.....Maggie

Oh Jerry, just popped in here to print out the recipe and found your reply - thanks so much  :-* just about to get started but don't think I've got 2lbs of beans quite - and that's before I remove tops, tails & string!....also only have ordinary jars, which I had to beg & borrow  ??? but think half that quantity would be a good start as there's only me and not much room here for storage etc. also still want to make the marrow chutney......and pickle some beetroot etc. etc. - cheers Maggie

 :) I made half the quantity and got about 3 1/2 1b chutney....was a bit worried when I tried 'tasting' it in it's warm state - it seemed soooo sweet!....I used dark brown soft unrefined cane sugar instead of demarara so that may have made a bit of difference.....but today - now it's totally cold and beautifully set - tried it with pork pie and it's just yummy  :P and a gorgeous colour - Maggie

Thought i'd try this at the weekend, but specifically which vinegar do you use?

white wine or  'pickling'  (.. or is their any difference??)

oubykh - I know you're asking Jerry the question but thought I'd tell you that I used a mixture to to make up the quantities...used ordinary malt vinegar and white distilled vinegar.....did the same for my pickled beetroot - seemed daft to buy more when I'd got all that....it's really yummy! - had some today mixed up with chopped ham in a warm pitta bread.....Maggie

I have used malt, pickling and white wine vinegar in the past. All worked well and the wine vinegar added an new element to the taste.

Hi Jerry,

Never thought of Runner Bean Chutney, sounds delish!  'Specially good for me as my runners producing far more than one person can eat and, believe me, I never tire of eating them!

Could we ask you a favour?  Would you mind posting the recipe on Recipes4All so that we can refer back to it without trolling through miles of posts at a later date?

When it says "stuff it through a bean slicer gadget", does this mean one of the ones that slices them lengthways, or the ones where you turn a handle and they slice them widthways at an angle?

This sounds great I too have loads of runners in bags some for seeds some for eating and the others not to sure what to do now thanks to you its chutney. Will copy and paste on to file.
