I made a very large batch of chutney last night but it's turned out too sweet, I've tried adding some balsamic vinegar but it's still not quite right.
Anyone out there got a good trick I can use to help this taste less sweet ?

How about making another batch, lessening the sugar, maybe adding more white wine or malt vinegar, (balsamic is sweet) then add the first one to the new one, at the last minute. Bring it all back up to the boil though!
