I made this the other night and if I say so my self, it was really nice and I didn`t even know if I liked asparagus!
I went mad that day! Made 3rd xmas cake and iced. semi rich fruit cake, soup and stir fried beef with noodles!
Well here is the soup recipe...
Chicken & Asparagus Soup
Serves 4
100g chicken, shredded
2 egg whites
half tsp Salt
2 tbsp Cornflower(Cornstarch)
8oz Asparagus, cut into 1`` chunks
4oz Bean sprouts
2.5pts/6 cups Chicken stock
4oz Button mushrooms
Mix the chicken with the egg whites, salt & cornflower and leave to stand for 30 mins.
Cook the chicken in boiling water for about 10 minutes until cooked through then drain well.
Blanch the asparagus in boiling water for 2 minutes then drain.
Blanch the bean sprouts in boiling water for 3 minutes then drain.
Pour the stock into a large pan and add the chicken, asparagus, mushrooms & bean sprouts. Bring to the boil and season to taste with salt.
Simmer for a few minutes to allow the flavours to develop and until the vegetables are tender but crisp.
