Both my apple trees are confused - they have blossom forming on them.
Should I remove it or enjoy the pretty flowers?
The trees are two-three years old and each have one apple on.

I would remove them. They are not going to come to anything now and they will divert some of the plants energy that could be put to better use in storing reserves for next year.

My strawbs are having a similar problem, but I have left the flowers alone and am hoping for a few late ones. ;D
