Can someone please remind me what you have to watch when flavouring oil with chilli ?

I use dry chillies, boil em up in vinegar and pop into the oil, don't ask why, I just read it somewhere by someone who was conscious of botulism!

i agree with Biscombe my method for fresh chillies is to heat up the chillies in the oil gently then bottle into sterilised bottles.
Me scared of botulism too.!! :o Some people on this web site have said they have no problems with mould etc in cold oil but for some reason i get mould when i have used cold oil
