Yes, yet another courgette recipe! Made this today and it is fabulous and easy, tho a tad fattening!
olive oil
1 lb Courgettes, chopped
6 ozs Brie, rind removed
1 onion, choppped
2 medium potatoes, chopped
2 stock cubes, or fresh stock. (I used 2 chicken cubes)
salt n Pepper to taste
heat a little olive oil in a pan, add onions, gently saute for 5 mins, add courgettes and saute 5 mins more. Add potatoes and cover vegetables with water plus stock cubes, or stock. Simmer until potatoes are cooked. Add Brie, and liquidise.
Check for seasoning, I found it needed a fair bit of S & P
Re-heat gently and serve! Youngest wants it for dinner tonight!
