Green Tomatoes

Please don't think i am completley stupid  :-\ but i thought green tomatoes were poisionous :-X?
How come there are so many delicious looking recipies for Green Tomato this and that  ??????
Is there a special tomato that stays green for such culinary uses?
I did read that tomatillos can be used for Fried Green Tomatoes......(at the whistle stop cafe!) but i thought all tomatoes went red!!!! ??? Oh blimey

I don't think they're poisonous -just unripe. At the end of the season you run out of time for them all to go red. Then you make green tomato chutney ;D
