Rhubarb cake

Rhubarb Cake
Ingredients:
1/2 c  Margarine
1 1/2 c  Sugar, brown
1    Egg; beaten
1 ts Vanilla
1/8 ts Salt
1 c  Buttermilk
2 c  Flour
1 ts Baking soda
3 c  Rhubarb; finely sliced
1/2 c  Nuts; chopped
1/3 c  Sugar, brown
1/3 c  Sugar
1/2 ts CinnamonProcedure:
Slice the rhubarb into 1/4" slices. Cream the margarine and 1ΒΌ cups brown sugar; add the egg, vanilla and salt; mix well. Add the buttermilk, flour and soda; mix well. Stir in the rhubarb. Pour the batter into a well-greased "x13" cake pan. Mix together 1/2 cup nuts, 1/3 cup brown sugar, 1/3 cup white sugar and 1/2 teaspoon cinnamon; distribute this mixture evenly over the unbaked cake batter. Bake for about 45 minutes in a 350 degree oven.


I didn't have buttermilk or yoghurt so just used milk.  Also only had flaked almonds for the topping, but it is delish, well worth doing the topping, and add a touch extra cinnamon - YUM!  Also, mine took an hour to cook but my cake tin was only 8 inches - if you used a 9 or 10 inch it probably would only take the 45 minutes.  A lovely moist bubby cake, perfect warm with yoghurt or cream, or cold with a cup of tea!  There goes my diet for another day!

The better half in the house  :-\ reakoned the topping was a little to sweet for his taste buds, but I thought it was gorgeous!  However, I will be making it again over the weekend and will try it with less sugar and more spice!  :D

MMMM tried the less sugar and more spice and it was lurvley. Made one for father's day (shall be away next week so we did it this Sun. He is 79 bless) The other I took to a barbie and gave it to my friends dad.
I also put in 2 eggs.and just manovered the recipie around as you do but.........yum. Thank you.

Just bumping this up as I made this cake yesterday and my daughter(who's not a big rhubarb fan) and her frienda loved it!
