Okay, so I guess due to lack of water and maybe root disturbance during transplanting, nearly all of my florence fennel has bolted!  Is it useable?  They did produce small bulbs, so is vegetable stock as good as it gets?  Also, if I cut them rather than pull them out, what are the chances of little bulbes being produced, or will it just be more flower stems?  

Thanks to the lack of water my lettuce, spinach, rocket, mustard and now fennel have all flowered rather prematurely.  Bolted lettuce soup is great and rocket flowers were delish, but what about the others?

I don't think root disturbance can cause it - I transplanted mine and I am not the most careful gardener and mine haven't bolted (yet!)

Small bulb are yummy in stir fries or salads (I love raw fennel!) My bulbs are still tiny too.

If you cut the bulbs you won't (apparently) get more bulbs, just more flowers.

Just to be contrary, if you cut the bulbs you will get more bulbs. You're not supposed to cut them too deep, and it does work -at least it did for me last year.
