You can build any sort of fire chamber and connect it (via a pipe) to a smoking chamber which has trays, shelving or hooks for the food and a smoke outlet.

Mine uses an old wood burning stove for the fire chamber it has a 10' flue pipe which leads to the smoking chamber which is essentially just a tall wooden box I built with removable expanded metal mesh shelving. The smoke goes in at the bottom & there is a 2" hole at the top for the smoke to escape.

The important bit for a cold smoker is making sure there is at least 10' between the fire chamber & the smoking chamber this is essential to allow the smoke to cool.

Have a look through the forums on http://www.thesmokering.com to get some more ideas.
There is a simple cold smoker design shown in this video although effective it is certainly not the cheapest or safest way to do it. http://www.youtube.com/watch?v=sivMMDnUEpc

Seems to download ok but here is a zipped version in case the pdf file is not downloading correctly for you. I could always print it out & post you a copy if this doesn't work.

Hi There,
I was searching on the internet for how to build a cold smoker and stumbled on the forum. I know this topic was from last year but i am interested in having a look at the PDF file that Baccy was uploaded but the link has now expired. Would it be at all possible for baccy or anyone else who may have it to post it again for those of us a little behind the times?
Thank You,
irene
