I kid you not! It is in the oven cooking as I type :o (have to say one of the strangest looking cake mixes I have seen in a long time, but a very pretty shade of pink ;D)

Well it passed the child test , and tastes nice (though could do with a tablespoon of grated orange zest I think) So here it is!
Preheat oven to 180c/350f or gas mark 4
Grease and line one 20 cm/8inch cake tin.
250g/9oz/1 1/4 cup plain flour
15ml/1tbsp baking powder
5 ml/1 tsp ground cinnamon
pinch of salt
150 ml/8floz/1 cup vegetable oil
300g/11oz/1 1/3 cups caster sugar
3 eggs, separated
150g/5oz raw beetroot, peeled and grated
150g/5oz carrots grated
100g/4oz/1cup chopped mixed nuts (optional)
Mix together the flour, baking powder, cinnamon and salt. Beat in the oil and sugar. Beat in the egg yolks, beetroot carrots and nuts. Whisk egg whites until stiff and fold into mixture using a metal spoon. Spoon into the tin and bake for 1-1 1/4 hours, until springy to the touch.
