Linseed - when and how long?

Out of curiosity I put a few handful of linseed around the garden in July, and then again in August, because they sprouted immediately and grew without much looking after into pretty leafy plants with nice blue flowers, covering some bare patches in the rockery. That alone made it worthwhile, but even better when the seedheads appeared and I managed to get some more linseeds out of them: however, the seeds are tiny (not much more than microsopic actually), and flat. Assuming that's because I "harvested" them too early, I wonder if anyone knows what is the best time to sow linseed (or are they all year round) and how long do they take to fully produce the seeds for culinary purposes?
