Steam it,microwave it with a dot of butter on it,roast it instead of spuds, put it away till Christmas and do a special casserole with brown sugar and orange juice, or use it instead of  pumpkin in Chiffon pumpkin Pie with a ginger crust and topped with whipped cream ..recipe available if needed.
