Green Beans

I didn't realise until now we had a recipe section (Doh!)

Have been furiously posting on cooking up a storm to 'Lishka re beanies.

So all bean recipes now on here I guess.

Here's one for breakfast tomorrow ;)

Green beans and carrots with ginger (from India)

Trim, prepare veggies. Cook, drain and return to pan with 2-3 tbsps water.  Add tsp sugar, 3 tbsp chopped coriander 1 tbsp grated ginger and 1/2 fresh green chilli, finely chopped.  Cook and stir so remaining water evaporates.

And here's one for lunch: (from india)

Trim beans and cut into 1" pieces.  Cook until tender but still crisp. Drain and refersh. Heat oil when v. hot put in about 2 tsp black mustard seeds, as soon as they pop, add finely chopped garlic, then add ginger (grated) and stir.  Put in beans, about 3 tbsps roasted sesame seeds, 4 tbsps chopped coriander, black pepper, cayenne pepper, tbsp lemon joice and salt.  Turn heat to low and mix well.  Taste and season.

See 'Lishka, told you beans is real cool!!

I can also do chutney  ;D

Hi Ruth

It wouldn't be bean chutney of course!  Think a new thread would be needed for chutneys and pickles as it's that time of year.  Will sort something out for you  :)

In the meantime - back to beans and a Thai recipe for salad which is usually served as a side dish to curry but could be a starter on on its own.

Usually made with winged beans but runners or French can be used, sliced.

Gather your beanies,  cook, refresh and drain.  Combine  2 red or green Thai if poss chilies, seeded and chopped, 2 tsps sugar, 2 tbsps lime juice, 2 tbsps light soy sauce, tinned coconut milk.  Toss beans in mixture with finely chopped shallot.  Garnish with  crushed roasted peanuts and toasted dessicated coconut.

Next recipe going to be Turkish I think

btw...anyone else been caught out by a glut of carrots (not main-crop) which have had to be pulled up??

I have! Got lbs and lbs of Nantes 2 to blanch, freeze or dispose of...gonna be an orange blob on the horizon by the time I've got this lot under control..

This is a simple one from Armenia.

Cook and refresh beans.  Melt butter in pan, add thinly sliced onion, ditto green pepper, cook until tender.   Add roughly chopped tomatoes and some basil, cook about 5 mins, stir.  Add beans, mix well and cook gently about 5 mins.  Stir in soured cream and serve garnished with chopped parsely.

'Lishka, this is about the 10th recipe!  Have you got enough ideas now?

This is why I always grow beans, they are so versatile.  If you've got beans and a store cupboard then you've always got a meal  :)

Hope they were of use 'Lishka, could have kept them coming!

Being 95% vegetarian I have to look at veggies in a different light, not just something as a garnish to meat but a complete meal!

Been backwards and forwards to Manchester lately and trying to clear new area for next years vegs, but must sort out chutney recipe for Ruth.

Oh yes, I have also visited Mamta!
