I have a friend with a big walnut tree but he very kindly gathers them up for me later in the autumn (no squirrels at his place) and pulls off the skins. I don't like them "fresh", i leave them in a basket in the pantry for several weeks till they dry out.
Which means they are never ready in time for the Christmas pud making :D

I'm really jealous I'd love to have a walnut tree one day.

A French friend told me her granny's recipe for walnut wine - pack green walnuts into cheap red wine, add some sugar and leave it to sit for a few weeks. the wine tasted gorgeous afterwards - like port but a bit walnutty.
